In your analogy, the bicycle tire with 70 lbs per square inch needs the extra pressure because of it's smaller volume. Simple hydraulics. Volume of the cylinder x the pressure applied = the force. 2 ways to increase force. Larger volume or higher pressure. If given the same amount of pressure assuming a person can only squeeze a certain amount on the pump, then larger volume would be to an advantage.
